Four stops sit inside about 1.5km of the market at Ayer Itam, so this one is done on foot, which also solves the parking, which is difficult around here. The awkward part is the hours. Two of these kitchens are finished by early afternoon and the laksa is a weekend affair, so the running order matters more than the walking does.

    Get the right stall: Penang Air Itam Laksa is the roadside one, not the sheltered food court opposite. The bowl arrives heavy with flaked mackerel and prawn paste over a sour tamarind base, thick rice noodles underneath, mint and cucumber and ginger flower piled on top, and no pineapple in this version.

    Nasi Kandar Kampung Melayu does the flooded-gravy style, kuah banjir ladled over rice until the plate is swimming. Ask for the ayam goreng, freshly fried and juicy, and take the telur ikan with curry daging if fish roe is out that day. Roti canai comes off the same counter for anyone not up for a full plate.

    Sin Ka Oon Bakery has traded since 1957 and still sits under its big red signage by the wet market. The kochabi cream puffs are what regulars walk in for, light shells with smooth custard, sold by the box of ten. Old school birthday cakes and cream horns take up the rest of the counter.

    Wah Meng Kopitiam (Air Itam Market Koay Chiap) stops at 12:00, so on a lunch crawl you either take it first or leave it for another trip. The broth runs lighter and clearer than the dark soy-heavy Georgetown version, with fried garlic oil spooned over the top. Duck meat is the version most tables take.

Saturday is the day this works. The laksa stall only trades at weekends and the koay chiap rests on Mondays, so a weekday run leaves you with Nasi Kandar Kampung Melayu and Sin Ka Oon Bakery. Both of those keep long daily hours, and the bakery is still trading in the evening if the rest of your day slips.
