Heng Kee runs out by lunch, Mekdina packs up mid-afternoon, and AhMa PanMee has not even opened at 11:00 while the other three are already serving. Take them in that order and nothing is shut when you turn up.

Clear homemade broth, thin noodles, big springy fish balls, a mother and son running it. It sells out by lunch, so this is the one you set an alarm for.

Everything is cooked to order instead of wheeled past on pushcarts, and there is a steamer built into the table so the last basket arrives as warm as the first. It costs more per head than either stall around it.

Dina cooks the nasi kerabu daging bakar herself, grilled beef over the rice. Hers is the Muslim-owned kitchen on this walk, which matters if you are eating with a mixed group.

Noodles hand-cut the Pahang way, torn irregular and fat with a proper chew, sitting in a herbal soup that eats like a grandmother's. The house sambal belongs in it, and the Hakka tofu if there are a few of you.
